About Our Chocolate

Our Chocolate is something that we take very seriously. It is, along with all of the other ingredients that go into it, ethically sourced and supports the cocoa farmers unions.

Where possible we are creating working partnerships with other local businesses and use fresh local ingredients to re-create patisserie inspired flavours and twists on old favourites. 

The cocoa we use is shipped to Belgium and processed to create really fine chocolate 'callets' or buttons to you and I! Once we get these buttons, we then need to be heat them to 45C, cool and then warm them again to ensure the chocolate is shiny and has the correct 'snap'. This process is called tempering. 

Each chocolate is hand tempered, hand poured, hand painted and the fillings baked and mixed in house. This means that creating any one chocolate has 4 distinct stages and cannot be rushed, sometimes they take 2 days to get them completed! You can be sure that this makes each chocolate unique and a taste experience like nothing you've had before. 

It is because of the handmade nature, that we can also offer personalisation regarding flavour choices and colours. These work amazingly well for weddings, corporate events and food tastings. 

Each week on Friday at 12pm we will place the chocolates we have available for direct sale. Some weeks this might be lots, some weeks not so much if we have had wholesale orders. We will offer pre-sale on special occasions. The next one will be Father's Day in June. These will go on sale in the last week of May.

We offer a range of shipping options, but recommend choosing Royal Mail signed for services for your shipping. Your goods, once ordered, will be shipped within 2 working days.

Our packaging is recycled where possible and fully recyclable at home. We are aiming to reduce the use of plastic by sourcing alternative lids... keep watching as we will let you know when we are ready to use these. 

We have touched on the quality of our ingredients, but for those of you who want to see exactly what is inside. We have listed the ingredients below. 

None of our chocolates contain gluten, nuts or peanuts and will state where they are suitable for vegetarian or vegan diets.

White Marc de Champagne: Chocolate (sugar, cocoa butter, whole MILK powder, soy lecithin (SOYA), natural vanilla flavour.). Ganache (white chocolate - as before, cream (MILK), Marc de Champagne, sugar, concentrated whey (MILK) proteins. 

Marc de Champagne & Sea Salted Caramel - Chocolate (sugar, cocoa butter, cocoa mass, whole MILK powder, unsweetened chocolate, soy lecithin (SOYA), natural vanilla flavour.), Ganache (white chocolate - as before, cream (MILK), Marc de Champagne, sugar, concentrated whey (MILK) proteins. Caramel (glucose syrup, sweetened condensed MILK, vegetable fat (COCONUT), emulsifier: mono & diglycerides of fatty acids, sea salt, natural flavouring.

Whilst COCONUT is not a top 14 allergen we have highlighted as many people avoid. 

Whilst these appear ok for a vegetarian diet, it is not listed as Vegetarian as gelatine is used in the champagne filtering process.

Sea Salted Caramel Bonbon: Chocolate (sugar, cocoa butter, cocoa mass, whole MILK powder, unsweetened chocolate, soy lecithin (SOYA), natural vanilla flavour.) Caramel (glucose syrup, sweetened condensed MILK, vegetable fat (COCONUT), emulsifier: mono & diglycerides of fatty acids, sea salt, natural flavouring.

Suitable for Vegetarians.
